I LOVE PANCAKES, and I LOVE pumpkin, what can I say, I’m a typical white girl. This recipe will blow your mind it is so good, but it does consist of a lot of ingredients, which is the only downside. You can add walnuts if you are a fan, and I highly suggest whipped cream over maple syrup, kinda like a pumpkin pie.



  1. In a bowl, mix together the milk, pumpkin, egg, oil and vinegar.
  2. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl.
  3. Stir into the pumpkin mixture just enough to combine.
  4. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Brown on both sides and serve hot.

Yields: 6 servings
